    Thank you so much for all of this great information! I have asthma that involves a great deal of inflammation. I just got a SCOBY and I it came in a pickle jar (with some of the previous Kombucha). Now I wonder because the jar’s lid is metal, but it’s lined with a paint-on sealing coat that may contain plastic. Not sure if I should keep it in there. I’ve only had it for three days and it’s growing fast, even though it’s pretty chilly in my apartment – so I think it might be still be healthy. I wonder if I still should I trust it…

    re: kombucha tea recipe: I have had very severe cripping RA resulting in much damage and I will react to sugar. Additionally this recipe doesn’t say what the starter is. Is it made with a dairy starter or a non dairy and if so which one. I need a non diary starter and no sugar. which recipes are suitable for me please?

    Will the tea be effective without sugar? I rarely eat sugar. Instead I go without it or use honey? Could I leave out the sugar or use honey instead?
