Okay, today is the 1st day of breaking my 30 day fast. I really have a surge of energy today. I couldn't eat my whole small salad but I did eat all of my apple. I started making cottage cheese for tomorrow but I am having a problem getting it to curdle. Tomorrow I will drink goat's milk keifer and eat the cottage cheese providing it turns out. I believe it would be safer for me as I have been sensitive to dairy at times in my life. What is really amazing is my knees are bending more today! Even my very swollen left leg and knee. The ankle has been quite swollen. What really frustrates me about all of this is how my body changes so rapidly from being swollen in one place and then another. Does anyone know why? My doctor says my body is trying to adjust..Any opinions are welcome..Thank you.

I'm not sure why either , its just seems to move from one joint to another around in me as well.
